CHEF JOE CURSO’S COOKING CLASSES

BREAD BAKING $60

Saturday, June 2, 2012  5PM

We will start with simple pizza dough and work our way up to classic French bread.

MENU:

Caramelized Onion, gorgonzola cheese and tomato pizza

Whole Wheat and Fresh Sage Focaccia with Green Salad and Antipasti

Pan Bagnat: French bread bathed in garlic oil and stuffed with tuna, arugula, tomatoes, eggs, anchovies and roasted peppers.

Techniques shown: Making yeast dough in both a mixer and a food processor, transforming your home oven into a baker’s oven, and forming dough by hand. Each student will fold and roll a baguette.

 

COOKING FROM AN HERB GARDEN $60

These dishes feature fresh herbs by the handful, picked from my own garden.

MENU: Zucchini-feta Pancakes with Fresh Dill Pasta with Fresh Tomatoes, Oregano, Basil and Fresh Mozzarella Pork Tenderloin Saltimboca, with Prosciutto, Asiago cheese and Sage Butter Roasted  Asparagus with Basil Parsley Sauce Strawberries with Orange Curd and mint

Techniques Shown: Salting zucchini, preparing raw tomato sauce, keeping tenderloin tender, vegetable roasting and an egg yolk-based dessert sauce. Notes on cultivating herbs will be included.

A delicious low-stress menu for a relaxing evening MENU: Herb-marinated Mussels, with Green Olive Cilantro Pesto Salmon with Pinot Gris Caper Cream Sauce Roasted Red Potatoes, Bell Peppers and Onions French Lemon Tart Techniques Shown: Choosing, cleaning and steaming fresh mussels, sautéing fish, reduction sauce and French pastry dough

Simple rustic dishes from Andalusia

MENU: Roasted Olives with Fennel and Orange Serrano Ham Croquettes Tortilla Espanola  (potato omelet) with roasted peppers and arugula Whole Sea Bass baked in a salt crust, with homemade aioli and asparagus Crema Catalana (a Catalan version of crème brulee) Techniques shown: simple tapas, a novel way of roasting and serving a large fish, mayonnaise making, and hassle-free custard.

MENU: Wild Mushroom Frittata with Fresh Mint Cannellini Bean, tomato and fresh sage Crostini Steak Florentine: thinly sliced sautéed steak served on a bed of baby arugula with fresh herb vinaigrette and Parmesan shavings Poached Peaches and Figs with White Chocolate Sauce

Techniques Shown: Using fresh herbs, sautéing wild mushrooms, cooking dried beans, grilling the perfect steak and poaching fruit.
