Please advise us what classes you are interested in and we will schedule them! We need 6 people per class and will also schedule a private group class if you have 6 people! See you in the kitchen soon.

Chef Joe’s Classes 

APPLE HARVEST $65
Iron Chef goes to Normandy, for a French menu built around Apples
MENU:
Green Salad with Apples, Blue Cheese and Toasted Walnuts
Poulet Vallee d’Auge: Chicken braised in Cider, Calvados, and Cream, served with Sautéed Apples
Egg Noodles
Fresh Green Beans
Apple Tarte Tatin. (Upside-down caramelized apple tart.)
Techniques shown: Braising Chicken, cooking with spirits, cream reduction sauce, apples as a savory side dish and a classic French tart.

STUFF IT! $55
Any food takes on more importance when it is stuffed and baked.
MENU:
Stuffed Mushroom Duo
Butterflied Chicken Stuffed under the skin with Ricotta and Zucchini
Stuffed Tomatoes Provençale
Potato Paillasson
Stuffed Baked Apples
Techniques shown: A novel way of splitting and stuffing a chicken, several stuffed vegetables and a simple potato gallette

JOE AND JULIA $60
Move over Meryl, I’ve been channeling Julia Child for years! Join me for a whooping evening of her glorious French recipes.
MENU:
Quiche aux Èpinards (Spinach Tart)
Boeuf Bourguignon (Beef Stew in Red Wine)
Pommes Duchesse (Fluted Potato Borders)
Haricots Verts Blanchis (Green Beens)
Ile Flotante (Floating Island; Caramel Meringues in Custard Sauce)
Techniques shown: French pastry, pastry bag, blanching greens, braising beef, beating egg whites, thickening custard, and boiling caramel

BREAD BAKING $55
We will start with simple pizza dough and work our way up to classic French bread.
MENU:
Caramelized Onion, gorgonzola cheese and tomato pizza
Whole Wheat and Fresh Sage Focaccia with Green Salad and Antipasti
Pan Bagnat: French bread bathed in garlic oil and stuffed with tuna, arugula, tomatoes, eggs, anchovies and roasted peppers.
Techniques shown: Making yeast dough in both a mixer and a food processor, transforming your home oven into a baker’s oven, and forming dough by hand. Each student will fold and roll a baguette

Chef Julie’s Classes

EVENING  of TAPAS OLE   $65
In Spain the evening starts with Tapas, little bites! Enjoy the most social way of dining with friends and family in this rich tradition of Spain.Try the new Sangria’s….not that one we drank in college!
